What's the Best Way to Archive Gmail and Outlook Emails Before Changing Jobs?

I'm planning to switch companies soon, and I have years of important emails that I'd like to archive before leaving. Some contain project discussions, technical references, and documents that I'll need for future reference. Since company accounts are usually disabled after resignation, I wanted to create a proper backup while everything is still accessible.
