Why do we use alt text on images?

An Alternative text or Alt text is used with and image that informs users about image. The Alt texts of images are important where the image is not available to the reader because they have turned off images in their web browser or are using a screen reader due to a visual impairment or when the image is not load properly.

The term “alt tag” is a commonly used abbreviation of what’s actually an alt attribute on an img tag. For any image on your site, the alt tag should describe what’s on it. Screen readers for the blind and visually impaired will read out this text and thus make your image accessible.

The alt tag is used by screen readers, the browsers used by blind and visually impaired people, to tell them what is on the image. ... Not just for SEO purposes but also because blind and visually impaired people otherwise won't know what the image is for. A title attribute is not required

The alt tag is an attribute of the image tag and is meant to be an alternative for non-visual browsers when they come across images. It help search engine crawler to know the images.
This means, that the text is meant to be used when the image is not visible on the page. Instead, what is displayed (or read) is the alternative text.
