What is use of ALT-tags in SEO ?

By the way Alt is not a tag it's an attribute. Alt is used to optimized image. Through Alt search engine crawlers knows about image. And provide you the specific image on image search.

Alt tags are basically descriptions for the images on the page. It's mainly intended for accessibility purposes. For example, people who are blind and accessing your site may be using a screen reader to read the page to them. When it encounters an image, it will look for an ALT tag on it and read it back to the user as a description of what the picture is. Also, if there are some problems with the images loading on the page, or the person happens to have images disabled in their browser for some reason, the descriptions are useful to understand what is what. The ALT text will be inserted where the missing image should be.

Alt tags alternate text associated with a web page graphic that gets displayed when the Internet user hovers the mouse over the graphic. Alt tags should convey what the graphic is for or about and contain good relevant keywords.
 
ALT = Alternative text.

Google bots can not read images such as JPEG, PNG, BMP etc. They can only read text. So when you want them to read the text which is in JPEG or other image, you give ALT to that image. The ALT text you give won't be visible to general viewers of the website but will be visible to Google bots.
