The cache is simply a snapshot of what Google saw when it last crawled the page in question - note the bit at the top that says - "It is a snapshot of the page as it appeared on [DATE & TIME]"
Fetch as Googlebot is simply a way to view your page exactly as Googlebot sees it, at the time you fetch the page - the cache can sometimes take a while to update, and so it's the Fetch as Googlebot tool that you want to use to see what Google is seeing...
